Mixed spicy all butter mince pies

The added mixed spice gives these delicious mince pies an added warm flavour. This pastry’s so good you can use any left over to make a few cookies.

Preparation Time: 25 minutes plus chilling time
Cooking Time: about 20 minutes
Makes: 12

Ingredients

250g plain flour, sifted plus extra for rolling
140g butter, chilled and cubed100g icing sugar, sifted
1 Freedom Food labelled egg
1 Freedom Food labelled egg yolk
zest of 1 orange  
½ tsp ground mixed spice250g luxury mincemeat
additional Freedom Food labelled egg, for the egg wash
icing sugar, for dusting

Method

Place the flour and butter in food processor and whiz for 40 seconds. Add sugar, 1 egg and the yolk, orange zest and mixed spice. Mix until mix leaves the sides. Spoon onto cling film and chill for at least 1 hour.

Preheat the oven to 190ºC/fan170ºC/ 375ºF, gas 5

Lightly beat the remaining egg for the egg wash. Lightly dust a work surface with flour. Roll out the pastry until it is 2mm thick. Stamp out 18 x 7.5cm rounds with a pastry cutter and put in the base of 2 patty trays. Brush the edges with egg.

Stamp out 18 x 6cm rounds for the lids and use a star cutter to stamp out a star shape out of the lid.  Brush the tops with egg wash and top with the pastry shapes. Brush again with the egg wash.  Place these on top of the mincemeat, sealing to the edges of the bases.

Bake in the oven for 20 minutes until golden brown.
Lightly dust with icing sugar.
