Perfect roast potatoes

1.5kg King Edward or Maris Piper potatoes, peeled
3 tbsp goose fat
sea salt

Preheat the oven to 200ºC, Fan 180ºC, 400ºF, Gas Mark 6.

Cut the potatoes into even-sized chunks. Cook in a large pan of salted boiling water for 7 minutes.

Spoon the goose fat into a large roasting tin and place in the oven to heat up.

Drain the potatoes into a colander. Shake the potatoes to dry and roughen the edges so to give them a crispy coating.

When the goose fat is sizzling remove from the oven and carefully add the potatoes to the hot fat. Spoon the fat over the potatoes for even covering. Return to the top of the oven for 45-50 minutes, basting and turning once or twice during cooking, until golden and crispy.
