Smoked salmon and scrambled eggs

Put some wholemeal or seeded bread in the toaster and prepare some slices of Freedom Food labelled smoked salmon, then make your scrambled eggs:

Ingredients:

(to serve one person)

2 Freedom Food labelled eggs
3 tbsp milk or single cream
A little salt and black pepper
Knob of butter
1 tea spoon of chopped chives
Salt and black pepper

Method:

Break two Freedom Food eggs into a small bowl. Add the milk or single cream.  Beat lightly with a fork. Season with a little salt. 

Heat a knob of butter in a small non-stick pan until just melted. Add the beaten eggs and leave for 20 seconds.  Start to stir the eggs with a wooden spoon or chopsticks if you prefer. Stir and then leave for a few seconds. Do not over-stir the eggs. Continue to do this until the eggs are softly set but are still a little runny. Remove from the heat, and the eggs will continue to cook. 

Serve either on toast alongside the smoked salmon slices and grind over plenty of black pepper.

TIP: This is enough for one person - double the quantity for two people and so on, but do not cook more than three portions in one pan or the eggs will not cook evenly.  If cooking for more people, cook in batches and keep warm.
