St Patricks Day is Thursday 17th March and a party is almost certainly coming to a town, village or city near you. A traditional blend of celebration, Craic and camaraderie - the potential for a bit of over indulgence is ever present!
You could choose to indulge in the traditional Irish breakfast instead of a few too many stouts – you’ll want to be hungry, but here’s what to stock up on:
Freedom Food bacon
Freedom Food sausages
Freedom Food eggs (served fried, of course)
Tomatoes
Soda bread
And potatoes so you can make your own Boxty – a traditional Irish potato cake. The recipe is on the right.
Boxty
Irish Potato Griddle Cakes
8 Servings (or you can halve the recipe if you need smaller quantities)
1/2 lb raw potato,
1/2 lb potato,mashed,
1/2 cup all-purpose flour,
1 Milk,
1 Freedom Food labelled egg
Salt and pepper to taste
Grate raw potatoes and mix with the cooked mashed potatoes. Add salt, pepper and flour. Beat egg and add to mixture with just enough milk to make a batter that will drop from a spoon. Drop by tablespoonfuls onto a hot griddle or frying pan. Cook over a moderate heat for 3-4 minutes on each side. Serve with fried bacon, fried sausage, fried eggs, fried black pudding, fried bread, fried soda bread.
